Ingredients:
- 1 can organic cranberries, whole or 12 ounces of fresh berries or frozen berries
- 1 tablespoon fine chopped leek
- 1 tablespoon fresh grated ginger root
- 2 teaspoons cinnamon powder
- 1 teaspoon cardamom powder
- 1 teaspoon vegan seasoning
- 1 tablespoon lemon juice
- 2 teaspoons agave nectar
- 2-3 cups vegetable stock
- 2 tablespoons cilantro or fresh mint leaves, chopped fine
- 2 tablespoons coconut oil or sunflower oil
Directions:
Heat a small saucepan with olive oil and add the ginger and leek; sauté for 3 minutes and add the rest of the ingredients. Stir and gently simmer for about 10-15 minutes.
Keep warm until serving time.
